Bistro Cordillera, located in Barra da Tijuca, is inspired
by Latin American gastronomy and culture
C ordillera” is a Spanish word that means a mountain range representing a point of union between some South American countries. It is on the basis of this concept that the Cordillera bistro appeared in the Cittá America mall in Barra da Tijuca.
The founding partner and creator of the place, the Argentine Maria Eugenia Cimino, is an economist and sommelière who has lived in Brazil for seven years.

After a trip through the South of my country, I was charmed by the culture of the bistros of that region and I decided to bring this concept to Rio de Janeiro. The main idea of the project was to create an environment that synthesized a bit of the Latin American culture, harmonizing the glamour of wine with the special recipes of my empanadas, the aroma and the special flavor of coffee and also the magic of literature, explains Maria Eugenia.
The alfajores and empanadas served in the house are all made using traditional Argentinean recipes, based on affective memories of what she used to eat growing up in her native country. The SALTEÑA empanada – which is stuffed with knife-choppedmeat, cooked potatoes and eggs – is one of the main features of the restaurant.
The Alfajor Maisena, on the other hand,is generously filled with Argentine dulce de leche and grated coconut. Cordillera’s wines are also worth highlighting, as it is possible to find some of the best Latin American brands there.
Besides the delicious cuisine, to have a coffee in Cordillera is also a must: Maria Eugenia makes a point of always serving the best coffee.
The brand she chose was Illy, which features a sweet flavour that perfectly balances the sour and bitter notes of flowers and fruit, caramel, toasted bread, chocolate, almonds and honey.

I’ve been in love with coffee since I was a kid. I made a selection of the best kinds, to make sure that I provide customers with the best coffee for their relaxing time, says the owner.

The architect Rodrigo Dinelli, responsible for the project, thought about how to bring the magic of a cold and gigantic place directly to the heat of the marvelous city, while accommodating areas for preparation, sales, tastings, reading, and relaxing in a store within a mall. After a few weeks of research and drawings, Dinelli concluded that the project would have to unify several functions in a very well divided space, while at the same time still remaining integrated and welcoming.
In addition, Rodrigo created, in a more reserved area at the back of the store, a collective table with three meters in length, where wine tastings are harmonized with the famous empanadas of the house, while lectures on various cultural themes are held.
“On the main facade of the store, all made of glass, I created a large curved wooden panel painted in celestial blue to represent the cold climate of the Andes Mountains, and behind it I used a warm yellow light that brings us to the heat of the carioca sunset. In the store’s interiors I used earthy tones on the walls to create a cozy environment and, again, the blue tone across the ceiling to give us the feeling of breathing the air from the mountain tops”,explains the architect
